Grain Free and Nut Free American Style Pancakes

Let’s talk breakfast, shall we? If you’re like me, you’ve probably got a few tricky eaters with special diets in the mix. It can be a real balancing act, can’t it? But fear not, because I’ve got a breakfast solution that’s a real game-changer: grain and nut-free American-style pillowy pancakes. These bad boys are a family favourite in my house and a lifesaver for those hectic mornings.

Quick, easy, and guaranteed to please even the fussiest of eaters, these pancakes are like a warm hug on a plate. The trick to these pancakes is gut-supportive psyllium husk and a few minutes of patience. I promise they will come out perfect every time. Prep Time: 10 minutes
Cook Time: 5 minutes
Servings: 2


  • 3 Eggs
  • 1 heaped tbsp Coconut flour 
  • 2 tbsp Psyllium husk 
  • 1/2 tsp Sodium bicrabonate 


  • Mix and let is rest for 5 minutes to thicken up.
  • Cook in olive oil, ghee, tallow or another healthy oil, 3 minutes either side and serve with compote, jam, maple syrup or honey.
