PORK MEATBALLS WITH APPLE & CORIANDER

These super easy-to-make and delicious mini meatballs are prefect for a healthy lunchbox or after school snack or served over your favourite pasta or spiralized butternut squash. Grated apple adds sweetness to the meatballs and makes this dish a hit with most kids and adults too!

Ingredients

  • 500 g minced pork
  • 1 medium onion - chopped
  • 2 medium apples grated
  • 1 handful chopped fresh coriander
  • 1/2 tsp sea salt
  • 1/4 tsp ground pepper

Instructions

  • Set the oven to fan 160 degrees celcius
  • Grate the onion and apples directly into some kitchen towel and squeeze out most of the moisture and tip into a bowl or food processor.
  • Add all the other ingredients to the bowl or food processor and blend until fully combined.
  • Make about 24 mini meatballs and place on a baking tray.
  • Place in a heated oven and cook for 20 minutes or until the juice runs clear when you pierce a meatball.
  • Serve immediatley with your favourite pasta or leave to cool for later. It wil keep in the fridge for 3 days.

THE SCIENCE BIT

APPLES contain a long list of phytonutrients such as quercetin, catechin, phloridzin and chlorogenic acid. Studies have shown that a typical apple (skin on) only has about between 10mg to 15mg of vitamin C, but its antioxidant effect is the same as 1500mg of vitamin C. Phloridzin (exclusively found in apples), has been associated with providing benefit to asthma patients improving lung health in general and in prevention of bone loss. Chlorogenic acid, has been linked with improved blood sugar balance as it slows down the release of glucose into the bloodstream. Quercetin has been shown to have antiviral, anti inflammatory and anti histamine effect – the superfood hat trick for the kids with gut and immune problems. CORIANDER is loaded with Antioxidants and polyphenolic flavonoids like quercetin, kaempferol, rhamnetin and epigenin as well as minerals like potassium, calcium, manganese, iron and magnesium and vitamins A, C and K, as well as B vitamins. CORIANDER is also proven to have antiseptic, antifungal, antioxidant, disinfectant and antibacterial properties.
