GRAIN AND DAIRY FREE PLUM CLAFOUTIS

Beautiful deep purple British plums are in season. A wonderful comforting recipe from the talented Hemsley sisters to celebrate this wonderful fruit. It’s super easy to make and ready to bake in a matter of moments. It’s the perfect “hug” of a pudding to kick off the weekend whilst ticking every single box for nutrition and flavour. AAAhhhhhh….that’s better 🙂

Ingredients

  • 1/2 tsp coconut oil
  • 6 fresh Plums
  • 50 grams ground almonds
  • 1 tbsp coconut flour
  • 2 tbsp honey
  • 3 medium eggs
  • 200 ml coconut cream

Instructions

  • Preheat the oven to fan 220 degrees centigrade or gas mark 9.
  • Grease a 23cm-diameter flan dish with the coconut oil.
  • Blend all the ingredients together (apart from the plums) in a food processor or blender until smooth.
  • Pour the batter into the flan dish and arrange the plums cut-side-up on top. If you can't fit all the plums then just chop them up so that they fit.
  • Bake in the oven for 15 minutes until risen, golden and brown. Serve warm.
