GRAIN FREE COCONUT AND LIME RICE WITH SWEET AND SOUR CHICKEN
We love this recipe – it is an absolute favourite in our household – It takes minutes to make and is a fantastic way of getting Super Foods into the diet.

CAULIFLOWER RICE
- 1 large head of cauliflower
- 1 tbsp coconut oil
- 1/4 cup coconut milk
- 2 tbsp lime juice
- 1 tsp lime zest
- 2 tsp raw honey
- handful coriander
SWEET & SOUR CHICKEN
- 2 medium chicken breast
- 1 tbsp coconut oil
- 1 medium lime - juiced
- 1 tbsp honey
- 1 tbsp coconut aminos
CAULIFLOWER RICE
Grate the head of cauliflower by hand or in a machine - I find doing it by hand a lot quicker and far less washing up to do!
Heat the coconut oil in a pan or wok and add the cauliflower. Cook for a couple of minutes - Add the rest of the ingredients holding some of the coriander back for garnish
Cook for 15 minutes and serve with the sweet and sour chicken, garnished with the rest of the coriander
SWEET & SOUR CHICKEN
place the chicken pieces in a bowl
mix the honey, lime and the coconut amino in a separate bowl
add the honey and coconut amino mixture over the chicken and leave for 5 minutes to marinade
heat up a pan and add the coconut oil
place the marinade and the chicken in the pan and cook for a few minutes until the chicken is cooked through and golden brown
serve with the coconut and lime rice and garnish with some coriander
THE SCIENCE BIT
The coconut and lime CAULIFLOWER “rice” is loaded with sulforaphane, which has been shown to improve mood and communication skills and is packed with antioxidants including; vitamin C, beta-carotene, kaempferol, quercetin (antihistamine), rutin, and much more. The “rice” is a perfect accompaniment to the deliciously sticky sweet and sour CHICKEN which is packed with protein and the amino acid tryptophan making it a natural stress buster and sleep aid. It is also a wonderful source of phosphorus to help support bones and teeth as well as selenium to help protect against free radical damage.
