- 500 g minced pork
- 1 medium onion - chopped
- 2 medium apples grated
- 1 handful chopped fresh coriander
- 1/2 tsp sea salt
- 1/4 tsp ground pepper
Set the oven to fan 160 degrees celcius
Grate the onion and apples directly into some kitchen towel and squeeze out most of the moisture and tip into a bowl or food processor.
Add all the other ingredients to the bowl or food processor and blend until fully combined.
Make about 24 mini meatballs and place on a baking tray.
Place in a heated oven and cook for 20 minutes or until the juice runs clear when you pierce a meatball.
Serve immediatley with your favourite pasta or leave to cool for later. It wil keep in the fridge for 3 days.
