GUT HEALING DAIRY FREE YOGHURT

Gut healing, creamy, nutritious, and utterly delicious dairy-free probiotic yoghurt. Blend with any fruit or fruit puree of your choice to make delicious flavoured yoghurt.

Ingredients

  • 1 1/2 cups soaked cashews
  • 1 1/2 cups water
  • 1 - 2 probiotic (please use the one you have been prescribed - for PANDAS kids avoid probiotics containing streptococcus thermophilus)

Instructions

  • Soak the cashews in water for at least 6 hours - the water should cover the nuts by a couple of inches.
  • Drain the cashews and rinse them well.
  • Place the drained cashews, 1 1/2 cups of water and the probiotic in a blender or food processor and blend/process until completely smooth - it should take between 1  to 3 minutes, depending on the power of your machine.
  • Place in a glass jar and cover with muslin or cheesecloth and leave somewhere warm, like an airing cupboard, for up to 24 hours
  • The yoghurt should taste sour, like lemon when done.

THE SCIENCE BIT

The fat in CASHEWS is almost entirely made of oleic acid (found in olive oil) with strong anti-inflammatory and antioxidant properties.
