- 2 medium chicken breast
- 2 tbsp plain gluten free flour
- 2 tbsp ground almond
- 1 large egg
- 2 tbsp coconut oil
- 1 tsp sea salt
- 1/4 tsp freshly ground pepper
Cut the chicken breast into 6 pieces and place in the beaten egg
Mix the flour and ground almond (or desiccated coconut), salt and pepper on a large plate
Take the chicken pieces from the egg mixture and roll in the flour mixture until fully coated
Heat ½ the coconut oil in a pan and then cook the chicken pieces in batches. It should take about 3 minutes on each side. Keep adding more oil as you add uncooked pieces into the pan
