- 2 cups frozen or fresh raspberries
- 1 or 2 tbsp honey (depends on how sweet you like your jam)
- 2 tbsp chia seeds
Place the raspberries and honey in a pan and bring to a simmer, until the raspberries have broken down a bit - this should only take about 5 minutes
Add the chia seeds and stir until they are fully incorporated into the raspberry and honey mixture
Simmer gently for about 15 minutes until the mixture is thickened
Remove from the heat and let it cool down to room temperature
Poor into a glass container - a Kilner or any other jam jar would be good - or you can just use a bowl and cover and place in the fridge to chill
It should keep in the fridge for up to 2 weeks
