Ingredients

  • 2 cups frozen or fresh raspberries
  • 1 or 2 tbsp honey (depends on how sweet you like your jam)
  • 2 tbsp chia seeds

Instructions

  • Place the raspberries and honey in a pan and bring to a simmer, until the raspberries have broken down a bit - this should only take about 5 minutes
  • Add the chia seeds and stir until they are fully incorporated into the raspberry and honey mixture
  • Simmer gently for about 15 minutes until the mixture is thickened
  • Remove from the heat and let it cool down to room temperature
  • Poor into a glass container - a Kilner or any other jam jar would be good - or you can just use a bowl and cover and place in the fridge to chill
  • It should keep in the fridge for up to 2 weeks
