Ingredients

  • 1 1/2 tbsp lemon juice
  • 1/2 cup coconut butter
  • 1/2 cup coconut oil
  • 1/4 cup nutritional yeast flakes
  • 1/4 tsp vitamin C powder
  • 1/2 tsp good quality sea salt

Instructions

  • Put the coconut butter and coconut oil in a glass jar or bowl and place in a pan of newly boiled water. Stir until the mixture becomes soft
  • Place all the ingredients in a high speed blender or food processor and blend until smooth
  • Line a freezer-safe container with greaseproof or parchment paper and place the mixture in the container
  • Freeze until set – it normally takes 2 to 3 hours to set
  • Keep the “cheese” in the freezer or in the fridge
