- 1 1/2 tbsp lemon juice
- 1/2 cup coconut butter
- 1/2 cup coconut oil
- 1/4 cup nutritional yeast flakes
- 1/4 tsp vitamin C powder
- 1/2 tsp good quality sea salt
Put the coconut butter and coconut oil in a glass jar or bowl and place in a pan of newly boiled water. Stir until the mixture becomes soft
Place all the ingredients in a high speed blender or food processor and blend until smooth
Line a freezer-safe container with greaseproof or parchment paper and place the mixture in the container
Freeze until set – it normally takes 2 to 3 hours to set
Keep the “cheese” in the freezer or in the fridge
