- 750 grams Plums (or fruit of choice)
- 4 scoops protein powder (of your choice)
- 1 tbsp raw honey
Heat the oven to 60°C/ 140°F
Rinse your fruit and cut in half and remove the core
Place the fruit in a large saucepan. Add a tablespoon of water, cover and simmer on a low heat for about 15 minutes, or until the fruit is cooked through
Remove from heat and add the honey and protein and whiz in a blender or food processor until silky smooth
Line a baking sheet with parchment paper and pour out the purée to about an 1/8 to 1/4 inch thickness
Place it in the oven overnight, for about 8-12 hours. The fruit leather is ready when it is no longer sticky, but has a smooth surface. If you have a dehydrator set it to 135°F and leave it for 12 hours or so. When the fruit leather is ready, you can easily peel it from the parchment paper
To store it, roll it and wrap it in parchment paper and place it in an airtight container and store in the refrigerator or freezer
