Ingredients

  • 750 grams Plums (or fruit of choice)
  • 4 scoops protein powder (of your choice)
  • 1 tbsp raw honey

Instructions

  • Heat the oven to 60°C/ 140°F
  • Rinse your fruit and cut in half and remove the core
  • Place the fruit in a large saucepan. Add a tablespoon of water, cover and simmer on a low heat for about 15 minutes, or until the fruit is cooked through
  • Remove from heat and add the honey and protein and whiz in a blender or food processor until silky smooth
  • Line a baking sheet with parchment paper and pour out the purée to about an 1/8 to 1/4 inch thickness
  • Place it in the oven overnight, for about 8-12 hours. The fruit leather is ready when it is no longer sticky, but has a smooth surface. If you have a dehydrator set it to 135°F and leave it for 12 hours or so. When the fruit leather is ready, you can easily peel it from the parchment paper
  • To store it, roll it and wrap it in parchment paper and place it in an airtight container and store in the refrigerator or freezer
