PROTEIN PACKED PLUM LEATHER – NO BITS!

We have been experimenting all week trying to come up with a fruit  leather recipe that doesn’t push blood sugar levels sky high – they are such delicious treats and we were determined to find a solution. First we tried using ground seeds and nuts but they came out bitty and did not pass the taste test with our little team of helpers. It was actually my daughter who suggested we tried protein powder with the fruit, and what a fabulous idea that was – our efforts were rewarded with sheets of smooth and juicy fruit leather without any bits whatsoever…. Perfect.

These fruit leathers are fantastic for packed lunches and as an after school snack, and will keep blood sugar levels nice and steady.

You can make these stunningly delicious fruit leathers with your kids – they will be blown away by the end result. It’s just so magical turning gloopy paste whizzed up in minutes into sheets of juicy deliciousness that can be torn, rolled, folded, cut into shapes or anything else your imagination can conjure up. The cooking time is long but leave it in a low oven overnight and in the morning you will be rewarded with the most magnificent and heavenly scent, not to mention sheets of fruity goodness your children will love.

Ingredients

  • 750 grams Plums (or fruit of choice)
  • 4 scoops protein powder (of your choice)
  • 1 tbsp raw honey

Instructions

  • Heat the oven to 60°C/ 140°F
  • Rinse your fruit and cut in half and remove the core
  • Place the fruit in a large saucepan. Add a tablespoon of water, cover and simmer on a low heat for about 15 minutes, or until the fruit is cooked through
  • Remove from heat and add the honey and protein and whiz in a blender or food processor until silky smooth
  • Line a baking sheet with parchment paper and pour out the purée to about an 1/8 to 1/4 inch thickness
  • Place it in the oven overnight, for about 8-12 hours. The fruit leather is ready when it is no longer sticky, but has a smooth surface. If you have a dehydrator set it to 135°F and leave it for 12 hours or so. When the fruit leather is ready, you can easily peel it from the parchment paper
  • To store it, roll it and wrap it in parchment paper and place it in an airtight container and store in the refrigerator or freezer

THE SCIENCE BIT

PLUMS are loaded with vitamins A and C and a host of antioxidants, and are a fantastic source of fibre. Dried plums have been shown to build bone density and reduce inflammation – a super bonus for all the little troopers on dairy free diets.
